Cheddar cheese and Chive Biscuits
2 cups flour
1/4 cup shortening or butter ( my favorite is butter)
1 tbsp sugar
1 tsp salt
4 tsp baking powder
1 egg plus enough water to make 1 cup
chives ( as much as you want - about 4 to 5 sprigs) chopped up
3/4 cup Cheddar Cheese ( or as much as you want - we like more)
Mix dry ingredients together.
Add chives and chesse, blend to coat.
Add BUTTER and blend to crumbly texture.
Knead slightly....not too much. The less you knead; the lighter the biscuit. Just til it holds its shape.
Roll out or pat down with the heels of your hand.
Cut out your biscuits. ( a clean tin can with both ends taken off makes a great biscuit cutter.
TIP: dab a little milk on the top of your biscuits before they go in the oven; makes them golden brown on top.
Bake at 425 F for about 15 mins.
